BREAKFAST IN BED

GUILT FREE PANCAKES w HOT CUSTARD by ZUMBOS KITCHEN-

A simple and delicious weekend treat. Perfect for breakfast in bed on a chilly morning or for your afternoon snack with a cup of tea.

 

First up, gluten and sugar free pancakes..

Ingredients-

1 1/2 cups of milk
2 eggs
2 teaspoons vanilla extract
2 cups gluten free flour
2 teaspoons baking powder
1 pinch nutmeg

Method-

Whisk milk, eggs and vanilla together in a jug.
Sift flour and baking powder into a bowl, make a well in the centre and add the milk mixture.
Whisk until combined.
Using a ladle, scoop your mixture into nice rounds onto a hot greased pan.
Flip your pancakes as bubbles begin to appear then cook the second side for two minutes.
Next up, your custard..

Ingredients-

1/2 cup of milk
1/2 cup pouring cooking cream
1 teaspoon vanilla extract
1/4 cup maple syrup
2 egg yolks
1 teaspoon corn four

Method-

Heat milk, cream and vanilla essence in a sauce pan.
Stir continuously with a whisk for five minutes, without bringing to the boil. Set aside.
In a second saucepan add egg yolks, maple syrup and corn flour. Continue to whisk and add the milk mixture.
On a low to medium heat, continue to whisk slowly for 15 minutes creating a creamy, thick consistency perfect for pouring.
Note- do not stop stirring your custard or lumps could form.
Enjoy your pancakes with hot custard and a side of figs. YUM!
